Spring So Sweet





Spring is in bloom! Days are longer and warmer and spirits are high at my house. I am excited for the season when fresh fruits and veggies are available at our local market, and for when my own garden bursts into bloom.


A summer full of refreshing flavor is what I am after, and I have been experimenting with a few different recipes to get my food crafting gears going. I have also been on a crazy tea kick, but wanted to make something colder to fit the season. I figured why not start with some herbal Popsicle
recipes to make for a sweet treat full of fresh flavor.

It was super easy too- it would make for a great DIY with kids and no sugar added makes it a better alternative to store bought pops.

These recipes are very experimental, and I recommend you mix and match flavors you enjoy and have fun with it! In the effort to use items I already I had I opted for an ice cube tray to freeze into Popsicle "bites"
, but an actual Popsicle tray might be ideal for you. I refer to them as "bites" to account for the ice cube style finish.

Per 8 oz of Water:

Simple Bites:
1-2 Tbs Chamomile Tea
1 Tbs Honey
3 Tbs Coconut Milk (optional)

Bring water to a boil, let it cool a little before adding it to your Chamomile Tea. Let it steep for 5-10 minutes before stirring in honey. Add milk if desired (I tried a half and half split between milk & no milk- and I believe the milk is the way to go, personally). Add strawberries and Chia seeds next. Freeze for 4-6 hours in either ice cube tray or Popsicle tray.


Strawberry, Lavender Bites:
1-2 Tbs Black Tea (Hibiscus or Elderberry for a caffeine-free recipe)
2 tsp Dried Lavender
1 Tbs Honey
1/8 cup Milk
1 tsp Chia Seeds
3 Strawberries Chopped

Bring water to a boil, let it cool before adding Black Tea, and Lavender. Let it steep for 10 minutes, (strain if necessary). Add in honey, and stir before adding in milk. Add strawberries and Chia seeds next. Freeze for 4-6 hours in either ice cube tray or Popsicle tray.

Lemon Mint Bites:
1-2 Tbs Green Tea (Lemonbalm or Ginger for caffeine free alternative)
2 tsp Dried Mint
1-2 Lemon Slice(s)
1 Tbs Honey
Fresh Mint (optional garnish)

Bring water to a boil, let it cool before adding your green tea and dried mint. Steep for 5-10 minutes, (strain if necessary). Add in honey, and stir. Squeeze lemon juice to taste. Add in fresh mint pieces before pouring into ice cube tray or Popsicle holder.
